So I took a 2year+ break after running a guild and raiding hardcore..
And recently a friend just got back into it and offered to pay for the new expansion and sub for me, so I'm contemplating on coming back to play casually.
Got a few questions as I'm lazy to look at all the patch notes over the past 2 years..

So it seems some servers are merged, are the players together on 1 server or just the chat/AH?
Is it possible to trade gold from other servers?
If I were to buy gold on JSP what is the current ratio?

Are you guys still enjoying the game?
I have a 7 day trial right now and it seems alot of the instant cast spells have been removed finding it hard to adjust.
Which class has changed the most over the past 2 years?
I have a 90 Pally/DK/Druid , 85 Lock/Hunter/Priest/Warrior/Druid, 80 Rogue/Shaman and a 28 Monk
Not sure which character I want to play as a main yet.. so abit unsure which class I want to boost to 90..

I had all professions maxed when I quit, are there changes for professions ?

1) Servers are crossrealm which means that all z ones will be populated with players from every realm. Even though you're on Korgath, you may see people from Sargeras, Emerald Dream, etc....

iirc, the chats are connected, AH isn't. Neutral doesn't exist anymore and A / H on a single server have been merged.

Some low pop servers have been merged together.

Corrections to your answers, didn't read OP at all.

1. Chat is only connected through General, you will remain on your own realms Trade chat. AH is now Alliance/Horde.
2. Currently do not, not really feeling the stat squish. They fucked up scaling from bc->wotlk->cata and have no forced themselves to fix their own error. Same content has been out for over a year, that doesn't make it any more fun.
3. 1:13 to 1:20 (odd to find someone selling or over 1:20 unless they are desperate).

Professions are still a thing, they just have no usefulness in raid or pvp (no synapse springs, nitro boosts are not very fast).
