Evertyhing still works, but the mats may not be in plentiful supply and the demand might be limited. The slower paced action is usually made up for with higher prices than on high pop, just not high enough to make up for everything. Low pop usually have this huge drawback of lacking rare drop BoE's for twinks/xmog/usage since there aren't enough ppl killing things to make them drop.
On the other side, low pop have all these small niche things you can do that are impossible on high pop realms due to either high supply or by competition, like buying and resetting pretty much everything. It takes alot of investigation and experimentation to pull off effeciently, check sites like TUJ/WoWuction to get an idea on where resetting can be applied successfully. Ench mats, cloth, pearls and things pre-current xpac are usually suitable.
Check out BoA enchant mats and who's supplying it. If there's demand for, say, +15 agi weap but there's never any Essence of Air on the AH, you could potentially score 2-4k an hour just farming those in Silithus. Or if there is no one farming essence of air on regular basis, so that no one will come and undercut you instantly, but there's still essences on the AH for fairly cheap, buy them and but each for 1/4 the scroll sell for. If there are no scrolls up, make them yourself or put the essences for 500g/each. If your server have a 70 twink guild, check the WotLK epic gem, WotLK enchant scroll and ench mat market. It might be a goldmine and you might be the only one selling WotLK stuff.
I can go on for hours with examples but where's the fun? Here's what you do - Find every market between Vanilla-MoP end game, try them all, ditch the bad and keep playing the one's worth your time. There's probably ~20 different markets out there, there's no reason you should limit yourself to 1-2 if you're after a bigger than average amount of gold.
