Yes, do it! I haven't been too active on these forums for awhile and haven't gotten around to updating my own guide for current expansion. Would be nice to have one for the current expansion.

What is gold really used for? Mounts? Temporary upgrades?

For my part, I am farming gold just for my own greed lol.. But yes it can be used on Mounts/Pets/Items upgrades/Mats/Gems/Enchants and more.

In that gold guide, I am covering EVERY professions, how to level them the fastest way and the cheapest way, I'm also covering how to farm the mats so you don't have to spend the gold leveling them.

Will definitely be interested to read about it though. Hope you do post it and hopefully it'll get stickied.
