Buy a month and find out.
Nobody can really answer this question since its personal oppinion.

But yes the expac is really fun. Really really grindy but really fun.

If you enjoy open world pvp you can toggle war mode which makes you kill able by all alliance you run into who also are in war mode.

It is not grindy at all.

Depending on your perspective and how you approach the game, it could be, or may not be.
Someone could play to experience everything the game has to offer one time around, and may feel like it's more of an adventure rather than a grind.
However, with the lack of players playing old content with gear equivalent to the old content, you're stuck with waiting until you're able to smash through old dungeons and raids alone, or having someone fly you through them.
The same can be said that someone is only going through all the old content to grind achievements, which could be either fun or tedious, depending on the person.

On the other hand, you could reach the max level as soon as possible and crawl your way closer to the current soft cap.
Whenever a new update raises that soft cap, your peak becomes the new standard. Easily obtained by casual players. And your crawl towards the soft cap begins again.
Repeating the same quests, dungeons, raids - all for the chance of potentially getting small upgrades.

If you're a casual player who only plays a couple hours and exclusively on weekends, then the game is probably not grindy at all.

If the grind is what made you quit, don't bother imo.
Leveling up is an easy yet boring grind. Granted there are level 110 boosts to get you started.
After you reach 120, you just move on to a new grind.
You're constantly working to improve your gear and level up your artifact.
New updates raise the soft cap, and start the grind all over again.
If you play regularly, the game is a constant grind, or a daily grind.
If you don't play often enough, you're always playing catch up.
You'll always find a lack of people to play with if you're not playing the current content.
You'll always be stuck with pug dungeons and raids if you just play casually.
Majority of players have an elitist mind set when it comes to group things outside of lfr.
If you're under performing or cause unnecessary problems, most people won't think twice to replace you.

That's my response based on what you've said.
However, if you said you didn't mind playing solo, don't mind playing with randoms, and don't care about how you compare to others, that's a different story.
It's a fun game, regardless of if you play regularly or casually. But like others said, it's all preference and opinion based.
One person can see a game as fun. Another person can see that same game as boring.
One person may like the art of a game. Another person may not like it.
One person could enjoy the controls. Another person might prefer something simpler, or even more complex.
Every game has good and bad points to it. No game is perfect for everyone.

well the grinding back then was a little different then how it would be now for me tbh.
but if i get back into it id like to find a group who wouldnt mind running with me :D that would make the slower parts of the game seem faster.

Well, assuming you enjoy PoE, grinding is nothing new.
If it gets boring, then WoW would probably get boring too.
But, when you have multiple games that you can hop between, that helps cull the boredom.
There are guilds advertising themselves as casual friendly, but don't expect to be in a progression run if you're playing casually.
With that being said, there are players willing to run through dungeons with others even if there's like a 1% chance of them getting anything as an upgrade.

I really like the new expansion atm.. just the new graphic is amazing. Also the lore is for ally freaking nice (horde is not so cool). I dunno pvp atm, also we do not have any serious pvm content so to tell if everything is fine is not possible.. atleast it is better then legion, which was better then mop and wod in my view. wotlk and cata still were the best expansions. BC was okay and classic was also ok because it was a new rpg (pvp was in vanilla bull shit and raids were like: the bigger model is the boss).
