I have a question. If, I join a public game and start doing cows for example and there are 3 players. These 3 players then leave, does this mean I still have a drop increase as if there were 4 players in the game? Does monster hp decrease/increase and does the exp increase/decrease?

It's whatever is loaded in near you. Put a bubble around yourself of about 2.5 screens in a circle. That is what loads in on players 3. Anything that spawns in after they leave is players 1.
