exactly, you are comparing apples to oranges and trying to call them apples.
Laura is older than I does not fit the same as Laura is older than me because they are two different sentence structures.
"I" implies that words come after it whereas "me" can end a sentence in an unawkward way. so yes "Laura is older than I" works because of a technicality, but if you tried to put that in an essay, you would get points off because it doesnt work well as a sentence.
Also, you said "Laura is older than I am older" implying that it works because of the second sentence. No. "Laura and I" in the case of "Laura and I are seeing a movie" is correct because "Laura and I" are the subjects of the sentence, and that is why you would use "I"
in "Laura is older than me" Laura is the subject of the sentence, therefore you would use me.
