That has always appealed to me, but I never got around doing it (the unemployed bit I mean; I have managed semipro teams before), it does sound like fun.
My first file in every FM is always a team with a rich history from a bad league (I've done Anderlecht, Panthinaikos, Crvena Zvezda, Hajduk Split, etc) and I try to win the CL with them. The challenge here is that your league's reputation is crap, and you have to slowly carry it up the UEFA rankings before any decent players want to join your team and you can start building towards winning the CL. Bonus points if the country isn't part of the EU as the league usually has higher restrictions on player selection (with Crvena Zvezda for example, I could only select a maximum of 3 nonserbian players above the age of 23). And to me it's also a way to learn about the players in those leagues and the details of their career, as well as the clubs, the league records and the football history of that country (I do spend more time than I'd like to admit browsing player/club profiles
