Bavaria is southern Germany right? What makes it so difficult to understand then if it's the biggest part of Germany, surely u are used to hearing it

It's not difficult to understand.

I am from Bavaria and have been all around Germany and never had any problems communicating with anyone.

it's not difficult at all if you're used to it. but most educated people (try to) speak standard german when talking to the press or actually anyone who's not from their region and speaks their dialect...
