Uhm, it's kinda obvious, that the more chemistry you have, the better your players will become, but I read a guide about how the chemistry works on each player and how it effects them. (I cannot confirm the guide is 100% accurate, but it seems like a lot of people @ EA Forums and Futhead are leaning towards it)
Basicly it covers how the players Chem, can either downgrade or upgrade his stats (hidden), but you will feel the difference in-game. Can be the player is stronger, faster or reads the game better etc...
5 Chem for a player, means the player will play as his card states, meaning the player will not get any kind of boost or downgrade, it will stay exactly like the player is shown.
5+ Chem means that the player will get "hidden" stats on his card, meaning he will play better than his card shows, hence why it make sense, that your player seems to be playing bettter, when you are playing at a higher chem.
Below 5 Chem means your card and player will play worse than his card shows and is basicly the opposite of what I just wrote above.
A lot of this makes sense, if you look at how a lot of people use(d) players such as Ronaldo, Reus, Bale etc... Out of position and have great succes with them, eventhough they are sitting at a 5-7 chem or whatever.
I personally used to play Reus and Ronaldo as strikers on different occassions and both did brilliantly eventhough they are both didn't hit max chem.

In general max chem is best tho
God dont remind me of the famous Eto'o xD he was out of this world.
