In the NFL, there's more parity, so a 10 pt favorite can upset on a given day, case in point being the Cowboys/Redskins game that Colt McCoy won a couple years ago, or the Jags/Ravens game a couple years before that. I think that's what makes it exciting. Plus it's simple to understand; you don't have to explain how spreads work to a new bettor.
For college, there's going to be some nights where the best matchup is kind of lopsided, and with less parity, a smaller chance of an upset. For those, I think a spread is best, if a thread is made at all in the first place.
