I think any day would work for me, but I don't get off work until 5pm Pacific time, so I wouldn't be able to draft unless it started at like 6pm (or later) Pacific time.

I have a draft on Tuesday at 7pm EST and Wednesday at 7pm EST. Anything before/after works for me. I work from home so I can pretty much do anytime within reason (can't do like 10 pm+)
