Ok so what is the best way to go about improving your team?

So far all I've done is play solo challenges for coins, what else is there to do without playing online against good people

Nice, my last pack was pretty bossly.
They just updated it and did a two game series where you either get vernon davis or megatron. Gunna hit that up after Ifinish my cards reg season.

get coins, bid on players etc. but how do I get these player packs? just completing events in solo challenges? or can you bid on player packs maybe in the auction house?

Trading for players is a waste of coins imo.
I just play solo challenges, they are ez until week 12 or 13 when the difficulty goes to all pro or all madden when they take advantage of every mistake lol. I've only bought one pack or the gold cards, every card was an upgrade or other card like injury or contract.
No you can't bid on packs in the auction house.

You can buy from the store, they have five tiers of cards you can get.
You can also buy them with Microsoft points lol
