Got a pm with a good question, so I figured I'd post it here so everyone gets the information.

How do you gauge how many games your goalie is capable of starting? Is it solely a performance measure? Is this set up where we can ride a goalie for 80% of the season?
Same question for my skater roster as well

Goalies: generally 75% is standard (backup will start by default after 3 straight starting games, unless you say otherwise). If your backup is really bad, you can choose to play him less often, or against bad teams, whatever you prefer.
Two of the hiddens for goalies are endurance and streakyness.
If you notice your goalie doesn't do well playing more than a couple games in a row, he could have bad endurance.
Conversely, if he still plays consistently after playing several games in a row, his endurance could be higher.
Endurance also affects how a goalie will play later in the game, although it's not too big of a difference for goalies.
As for "streakyness" (not a good term, I know lol) Some goalies are streaky. Meaning, when they're hot, it's likely to continue, same applies for cold streaks.
However, the performance of a goalie with low streakyness will not be based (or not as much based) on how well he has performed the last couple games.
Skaters are pretty much the same for streakyness, but with endurance, it doesn't affect the amount of games they play in a row, but only how well they perform later in the game.
You can play skaters all 44 games with the same effect of having them play every other game.
Also, a note: If a player (skater or goalie) is streaky and on a streak, the streak will be broken if they sit a game.
This means if you have a player who you presume to be streaky, and is on a cold streak, sitting him for a game may possibly fix the problem. (Unless he just sucks)
