I also am starting to really like hockey refs (i mean compared to NFL of course) they seem pretty fair in what they call, and don't take alot of crap if they don't want to. I even get the feeling they call penalties on both teams just to settle them down when things are getting out of hand.

Yeah embellishment calls are for flopping. Sometimes you see both a tripping call and an embellishment call on the same play, which sounds counter intuitive at first but make sense in a case where player X indeed trip player Y, but player Y embellish his fall in an attempt to draw a call. A lot of people don't understand that one but it make sense to me at least.
And yeah people will complain about the refs no matter what but I think they're doing a good job for the most part. You'll see once it gets to the playoffs they start to keep their whistles in their pocket more and the games get more physical. People are complaining about that a lot but I don't mind it personally.
And yeah you're right in that they'll start to call matching penalties in scrums when they feel the game is about to go out of hands. If the game is already out of hands for one team, they often call only one player to put a team on the power play. The play is less physical and there's less chances for altercations during a man advantage.
