Ya settle up, then quit. I was in a similar situation a long time ago painting for a guy.

If he's not an asshole then as soon as the next check comes tell him you found something that's a bit better of an opportunity. Act like you stumbled into a different job or something so it's not like "dude you're flaky and I hate working here."

If the dude holds a grudge for that, better now than when you have like 120 hours he owes you.

Once you're out never take another fucking under the table job again. Just asking for stuff like this to happen.
