if you were to produce something more of a mature content then you'll be aiming for an audience with that mentality to actually enjoy and understand something like Gantz
that being said, the audience you will be serving is much smaller and already have jobs (a life) who probably don't have as much time as a kid in school to watch and/or buy
consumer goods of that anime.
so you're basically asking
"why don't people throw themselves into bankrupt (if not make very little) by creating an anime that won't sell?"
i'm not sure if you've noticed but generally speaking, 99% of animes have their main character as:
A. A teenager/child (Naruto, One Piece, Full Metal Alchemist, Dragon Ball)
B. a person who is still in school (Death Note)
C. Both A and B (Bleach)
Irony... most of the audience is young/middle aged adults....
