anyone know the actual canon to the entire dragon ball universe(including movies?)

what exactly do you mean with canon? Just based on the manga or official stuff?

There are 153 DB episodes (out of which I'd say around 40 are fillers that don't follow the manga)
Then there are 291 DBZ episodes (out of which around 100 are fillers) -> DB Kai is 97 episodes long and follows the whole DBZ part of the manga without fillers, except the Buu Saga
Then there's DB GT which is 64 episodes iirc, and doesn't follow the manga at all, the anime is completely original work and Akira Toriyama isn't behind it.

There are 17 movies (4 from DB, 13 from DBZ) that don't follow the managa, and TV specials (5 from DBZ, one from DBGT) out of which only the one about Trunk's future and Frieza destroying the Saiyans take place in the manga's timeline (although they weren't completely written in the manga).

I would suggest you to read the Dragon Ball manga so you know what parts are canon and what parts are not. Personally I googled "dragon ball z fillers" and all I got was words that tell what parts are fillers and did not say what episodes are fillers. I believe the only two canon movies are Bardock Father of Goku and The History of Trunks. You can get them both on blu ray and they come in 1 blu ray set.
