I watched the original FMA in English.

I'm wondering if I should watch Brotherhood in English too, since I already associate many of the characters with their respective English voice actors.

However, if most of the voice actors are different, I might as well just watch it in Japanese

i watched the original dubbed, then brotherhood in sub.
since brotherhood was a completely different story i wanted to give them different voices. not sure if that makes much sense but yeah.

Why do you think so many Americans like it?

The dub is really good so it really doesn't matter which you watch. I would say watch part of episode 1 or 2 in both languages and see which one you like better.
