studio deen did an amalgamation of all 3 routes of the original VN, had a much lower budget, and omitted sexual content.

ufotable only focuses on the second route, unlimited blade works, and the third route is being made into a movie.

Main difference I would say is that Ufotable is (more) true to source material, and has a much better pacing and animation quality.
