Hitsugaya knew he's weaker tahn the other Captains, so why would he go up front to a espada when there are other captains around him that's more powerful more stronger? why can't he just go for the easy ones?

both sides have limited amount of people fighting, and that means they have a limited amount of captains on the playing field right now..... they're all bound to go up against an opponent, and since hitsugaya is a captain, he has no choice but to fight an espada....
