Season 1, namely bakemonogatari; is catered a lot to the introduction of each character.
it explains deep into each character's backstory, about the things they've been through and the oddities they met that "solves" their problems at a cost.
first run through for season 1 would be pretty confusing, especially since shaft made season 1 with the random black/red/blue/yellow/white scenes which in general lies a meaning to the emotion/situation of the scene.
season 2, nisemonogatari; most of the random color scenes were removed. a few fanservice episodes, but that's mostly due to the fact that nisemonogatari only had 2 major plot within.
as for 'season 3'
or rather, monogatari series second season, you'd have to watch bakemonogatari -> nisemonogatari -> nekomonogatari (black)
*order it was released, actual chronology would be nekomono (black) -> bakemono -> nisemono -> monogatari series S2
also tbh, it'd be best if you did a few google search if you truly want to understand the third season as the events are rather simultaneous.
tl;dr
this anime is awesome and so far nothing beats it, at least for me.
unless you're someone like kaze who only continues watching an anime if he 'understood' it within the first 1-2 episodes, go watch it.
