All the Espada except for Aaroniero Arruruerie (#9) were at least Adjuchas-class Menos before becoming Arrancar.
Aaroniero Arruruerie was the the only gillian among them.

It is not known whether any of the Espada were Vasto Lorde before being turned into Arrancar...
however, it has been implied that the top 4 may have been.

It is also thought that Wonderweiss was probably a Vasto Lorde before being turned.

There are three classes of Menos (Menos being a sub-group of Hollows):

1. Gillians
2. Adjuchas
3. Vasto Lorde

An Arrancar is a hollow that has removed its mask and has gained Shinigami-like powers.
The average Hollow that removes their mask would have to at least be Menos-level (Gillian) or stronger. Few Hollows have the potential to remove their masks naturally, and even if they manage to do so, the change in power may not be significant.

Probably the latter, right?

Before Grimmjow became an Arrancar, he was a panther-like Adjuchas-class Menos.

We don't know for sure though...
He could have transformed before his mask removal.

Actually he is one of the few we can be fairly certain about.
It is widely accepted he was interrupted on his quest for power by Aizen and turned into an Arrancar whilst still an Adjuchas-class Menos.

If any of the currect Espada were Vasto Lordes before becoming Arrancar they would arguably be in the top 4.
