I never really use the Alt + Click . I actually really don't understand it and that is probably why I don't use it. My renders still turn out pretty darn good though

The alt click is to stop the next curve you make from curving a different way.
When you alt click and then click and bend the pen tool again (moving the mouse around while mouse button is clicked in)
you can make the proper curve you need to get around the subject.
