logia user stabbed with knife = no effect in organs/skin whatsoever(unless haki is being equipped!)
paramecia user stabbed with knife= change to hurt organs/pierce through skin depending on the material fruit grants you

Paramecia can either Create and control or become what their fruit is. Logias are both. Create and control and become their fruit. Also Logias are an element. Luffy becomes rubbers but he can't create rubber from his body. Mr. 3 can create wax out of nothing and control it. but he doesn't become was himself.

logias being an element is a confirmed fact. We don't know what caribou is so say he absobed it is no excuse for saying it isn't an element

As it stands, cariboo could be logia or paramecia at this point.

Sometimes paramecia can closely mimic logia characteristics like stated in post 2455.
