Best part of the whole episode was how pissed he was after one punching a dragon level threat lol.

the fight was good... but yet again, his reactions were terrible.
the strongest person hes ever fought, and no excitement at all.

Because it wasn't a challenge at all. How do you not get this? That's the premise of the show...

it still took several punches to finish him. that would have been enough to inspire some kind of positive reaction.

if you paid attention, he wasn't even trying
he could've finished him with 1 punch if he wanted to

he was obviously not taking any damage regardless of everything boros did

Probably because Boros, the strongest person Saitama has fought, had to travel across the universe for decades to find a challenging fight. Imagine the sorrow and disappointment of Saitama realising how improbable the chance of a real fight is.
