The guru used Appa and Aangs bond to connect. Only the Avatar animal guide can have this bond to a human. Any other animal cannot get this kind of bond.
and oh, in the Avatar world in the past, all the animal guide dies with the Avatar unless they died first before the Avatar.

There's no such thing as Spirit bending... just because in Avatar there's energy bending and elemental bending, doesn't mean they can bend everything else.
seriously though... he used his super awesome Guru powers. Even the Author didn't have to explain this cause he knew that the word "Guru" itself should be enough for the readers/viewers.
