Well you have to kinda understand his PoV. She was his motivation, his goal. Someone who dedicates themselves to their dream/goal. Sorata gave it his all with confidence and what seemed to be him getting declined once again. Seeing Mashiro not go nuts for her manga broke him down most likely in confusion and simply frustration because he doesn't get it.
