If you're going to watch FMA, which I'm sure you have, go with Brotherhood. That one actually follows the manga.

I enjoyed both, but I didn't want to be left hanging on the actual concept of the story, so I preferred brotherhood.

i'm gonna be that guy and say Adventure Time
obviously not anime, bcus it's american made. but it's a pretty good animated show about adventures, if that's what you're looking for
quirky and funny as hell
also gets pretty philosophical in later seasons
