Berserk - (Been on Hiatus for some time but definitely worth watching)
Cowboy Bebop
Tenjho Tenge - (Extremely good fight scenes, highly recommended, great story line as well, Raunchy at times)

I can go on for a while but I suggest checking these out if you haven't already.

WTB SEASON 3

and, watch Claymore. Very good fight scenes, and not very long. I think its only 26 or 27 episodes.
