One Piece did have like 12 filler episodes up to episode 108 tho
But even then it doesn't have that many fillers for it being 500+ compared to others

edit: Don't forget One Piece anime started 2 years after manga while Fairy Tail started 3 years after. Also most of Fairy Tail episodes cover ~2 chapters.
