My guess for Obito's explanation is that he spent some time in that dimension between the two worlds. Maybe he trained there with Madara for an extended period of time, and maybe time goes slower in there or something, so he could have aged. Maybe that's why he appeared to be an adult when he fought Minato. I dunno, best I can think of and I doubt Kishi would provide any better explanation.
