I'm reading a bunch of Tobi theories for shits and giggles and they all end up arguing about how Tobi gets information. Can't he use his eyes to take information from people?

I assume that Tobi knows absolutely everything there is to know in this entire story, aside from people's unique abilities that he wouldn't have ways of gaining knowledge of unless he fought them. I assume he knows everything about Orochimaru, Hiruzen, Hashirama, Tobirama, "the one who knows everything", Nagato, Madara, Rikudo, Minato, Kakashi, everything.

I kind of wonder who it is, too. I suppose if I had to guess the "people that knew everything" in this series it would be Tobi, Orochimaru, Itachi, Kabuto, or Madara. Clearly, of all of the candidates there Madara is the only one that makes sense at this point. Maybe it's some ancient animal, too. Hell, I could see Sasuke hunting down Madara on the battlefield to ask him some questions.
