You're wrong, they do age... or grow. In the anime, they flashbacked to when Zaraki's vice-vaptain was just a baby crawling on the ground. She's clearly bigger now.
Also, when they flashbacked to Hitsugaya's past, he was much smaller than he is now.

Most likely a contradiction though..
The anime stated they do not age within soul society.

gin for example

in pendulum arc he was a kid but now he is a man

let's put it this way, hitsu is relatively young but not a kid.

ASSUMING hinamori is the same age as rukia and renji as they went to the academy at the same time, and hitsu is younger than hinamori.

Rukia became a kuchiki during the academy and she says in the early episodes that she's been in the family for 40 years. So assuming she was in her teens or twenties during the academy she should be around 50-60 years old.

Since hitsu was already present when hinamori was in the academy he should be at least 40 years old.

Now we go back to Gin, he was kid when it flashed back ~100 years ago. If it takes 100 years to mature from early teen to late 20's - early 30's then hitsu should be in his early 20's (relative to normal age)
