Besides those two complaints, I really enjoyed it, and it fit my previous preferences almost perfectly.

I will still check out the ones that were previously mentioned, however, I'm wondering if there are any other shows that would fit that criteria better, now that you have Claymore as a perfect example?

You may enjoy Fate/Stay Night and Fate/Zero. Set in a modern world, but the fights are medieval weaponry(Swords, lances, bows, ect.)
Couple others that aren't quite exactly what you are asking for but still good:
Elfen Lied(Strong female, excessively violent, but not quite what you are describing)
Hellsing Ultimate(Seras because a complete badass later on in it, yes there are "gunfights" but it's the overwhelming power of the 2 main characters and when they fight as vampires instead of with guns that make me think to recommend it with what you asked for.)
