Hunter x Hunter 2011 - Possibly the best anime ever made. It never has a weak point in the story, each arch is significantly better than it's predecessor.
Full Metal Alchemist Brotherhood - Absolutely amazing story, right amount of feels, doesn't rely on fan-service, dialogue is above average and it actually has a decent ending (something rare for Anime)
Death Note - My all time favorite, it gets a lot of hate for a multitude of stupid reasons. The battle between L and Light is one of the best battles in any anime period and although the quality drops off towards the end, it's still a good watch.
Code Geass - Another show that loses itself halfway through and starts making shit up to keep going. Regardless, the animation is fantastic, the story is intriguing and it's got one of the best endings of any anime.
Claymore - All around entertaining show, it progresses at a decent pace and when shit goes off, it really goes off.
Berserk - This one will frustrate the ever living fuck out of you, it's worth it though. Absolutely amazing and Guts is one of the all time best Anime bad mother fucker.
Steins Gate - A lot of people will try to convince you this is more complicated that it really is. It's a good show, the story is very original and it's a decent one to think about.
One Punch Man - Perfect blend of comedy/action - It's short as only one season is out, it looks like we can expect season two towards the end of this year or early next year. The first season was fantastic.
Bleach - This is by no means the best anime, but it's got some of the most amazing fights of any anime. Ulquiorra vs Ichigo is probably the best anime fight I've ever seen. It's an entertaining show. I recommend watching it with the filler at least once.
Fate/Stay Night - Kiritsugu Emiya is possibly one of the best anti-heros ever created. This show has some flaws, but all in all, it's a great watch, with some good fights and some great character development.
Fate/Stay Unlimited Blade Works - Not as good as Night, but it's still entertaining. Same type of shit, good fights, interesting story, less character development and some shit that makes no sense but still worth watching.
Samurai Champloo - Another comedy/action mix. The show is like a lot of older animes with no real plot development until late in the show. However, the characters are fascinating and it's a beautifully done show.
Trigun + Cowboy Bebop - These are a bit older, and you really just need to watch them and get all the way through them. Both of them are amazing in their own right and anyone who watches anime needs to finish these two shows at some point.
Gantz - This one an interesting little mind-fuck. The anime is a little disappointing with the ending, but it's worth watching and it's got some great scenes.
Deadman Wonderland - Another visually stunning show. Lots of blood, lots of needless violence. Biggest complaint would be the almost unbearable whiny voice of the protagonist. It's short and worth watching though.
Hellsing Ultimate - Ultra violence, hilarious protagonist, Nazi vampires, what more do you want?
There's a few more I could give you, but I think this is a good enough list for now. If you really enjoyed Naruto, you might want to start with Bleach, it's another Shonun anime with an incorruptible lawful good protagonist with a dark side. They've got a couple things that are eerily similar. The animation in Bleach is much better and so are the fights.

I know that this is a dumb thread but I really prefer seinen/psychological/thrillers, they just add a little more to the show than your typical shonen - not that there is anything wrong with them... you just have to think a little more which has always been quite important to me.
Any examples? I've yet to find an anime with enough depth to make me contemplate anything for more than 5 minutes. Monster was the one that pissed me off the most. I had a ton of people hype it up as this thought provoking deep show and then it was just shit... I mean, it wasn't terrible, but I was insanely disappointed with how much it was built up. It just wasn't good, slow, boring and predictable the whole way through.
