Much of the best yuri is manga only, but there are some really nice anime as well, especially if you count subtext.
Sasameki Koto- very nice comedy/drama mix
Aoi Hana- lovely art, with an engaging story
Strawberry Panic- campy as hell but has its moments and lots of yuri ^^^^
Mai Hime- solid action, and contains one of the classic yuri pairs of the decade
Simoun- I haven't watched it myself, but I will eventually, heard it was amazing
Candy Boy- yuri between sisters is also good
yuruyuri- I see u plan to view!
Saki- technically no pairings, but the yuri goggles are a time tested investment, needed for any true fan!
k-on- see above, technically no pairings but these girls are probably as straight as circles hue
kannazuki no miko- classic at this point
kashimashi girl meets girl-cute, kind of gender-bender, guy turned into girl permanently though, touching moments
and best for last
Maria sama ga miteru- technically only one true yuri pair but this is god tier
If you read manga, let me know, there is tons more stuff to read, much more then the anime out at the moment.
