For women - i guess you have to say Jodie Foster or Meryl Streep, Lauren Bacall, Grace Kelly
So many good male actors, a couple of my favorite are Michael Caine, Paul Newman, Humphrey Bogart, Harrison Ford, Jimmy Stewart, Stanley Tucci, Clint Eastwood and about 20 others

Stanley Tucci is highly underrated, IMO. Excellent character actor.
