So if the writer says it can't happen in that fictional universe, that's ok, but then that fictional universe is that much further away from reality. My money is that this was decided for practical reasons, imagine zombie crows and seagulls, humans wouldn't have single chance against that kind of 3 dimentional attack aswell as the difficulty of making good television from it (remember the CGI tiger?)

Just because certain viruses can cross species doesn’t mean all viruses follow such trends. In actuality most viruses are species specific and it takes fair amount of mutation within a cycle to cross species.
