It'd be cool if he did that now I think of it. But again, not the case on the show.
I mean...not everything is 100% perfect. I still see that scene as a bit of a problem. It could've been done in so many other ways.
Anyway...
I think you have slightly missed my point, other than "peripheral vision", Oliver taught Barry to look beyond the basic scope when entering a situation... look at all avenues/aspects and be prepared for anything, maybe [keyword "maybe"] Barry was prepared to be shot from behind before entering the area, thus, he was able to stop that bullet.
Now, on the last episode, he got knocked back with a simple sonic blast, thus everything that Oliver taught him went out the window...

It is only a make believe show, and it does not matter how we interpretate certain things, those things may NOT exist in that dimension, maybe the guns firing is just as instantaneous as the projectile... just speculating this because in our reality, the flash does not exist.
