They definitely can't eat each other. The ones that are walking around open spaces freely can be feeding on animals, but I'm talking about the ones that are confined in a space. For example, take the incident when Shane and Rick were fighting and Shane threw that big tool at Rick, broke a window then the zombies started pouring out of the building through that window. They couldn't have gotten enough food in that space to keep their cells intact for more than a week.
Seems as though they don't eat each other, at least I haven't really seen it. But I don't see why they couldn't, it's still a dead body.
The shoe does show some sort of decomposition: ex when they stomp the heads of the zombies, he heads seem to just mush and cave in. But your right that's not accurate decomposition in relativity to the time frame. I have wondered the same questions myself a few times but never le it bother me because it is fiction
