If we are only talking main characters in the show, then a pre-injury Jaime Lannister. The book made a point about how Jaime with his hands shackled together, malnourished after being locked up for weeks fought vs Brienne in her best condition and the battle was an even match, neither could win, eventually being broken up by a 3rd party.

If we are talking about all characters in their current state as of this episode, then it would be Gregor Clegane in his resurrected state if you count him as a person and not a magical beast.

If we can't count Gregor, then I think the next best would fall to the Hound, assuming he is where we think he is (in good shape).
