I've seen people watching them in release order, and people watching them in chronological order. Obviously I'm talking about people that, like OP, hadn't seen any Star Wars movies by the time there were at least 6 of them out. And well, it seems that people who watched it in release order enjoyed it more than the ones who watched it from 1-7. Episode 4 is very introductory, and people who don't start there seem to find it boring and they don't get attached to the characters in the same way as most of the people who do start there. The out dated special effects, and battle choreographies also seem to be perceived as silly by the people who have only the flashier ones from episodes 1-3 as a reference.
I'm not saying it always happens like this, but it is something I've observed. So I would recommend watching 4-5-6, 1-2-3, 7 (release order).
Chronological order is the best to go only once you've seen them all imo.
