Darth Maul is probably one of the most celebrated elements of a not often celebrated Star Wars Episode One. Especially by the older critics.

They'll have to pull Karpyhsyn out of retirement but it would make for an excellent movie.
The second KOTOR would be a better movie but since it needs background I bet they would do a movie based on the first one.
