I feel it's unfair to compare shows based on such different sample sizes. 277 episodes of South Park have aired, 93 for Archer and 27 for Rick and Morty.
If you were going to wipe all 3 shows from my memory, but before the wipe I got to pick one of the shows I would be able to rewatch later (banned from ever watching the other 2) then SP would be my first pick and R&M last. SP has produced the most total enjoyment. But, like you said, it also has more dud episodes.
On a per-episode basis, R&M has the highest quality average episode. But as with anything, it's always easier to maintain a higher average when you only have to do it for a smaller sample size. The creators take their time delaying the season to make sure it gets done right, where SP is basically putting stuff out on the fly every week.
Archer falls right in the middle on both scales. Higher average quality than SP, less than R&M. More total enjoyment than R&M, less than SP.
