The torture doesn't need to be seen because the end result is very obvious, what is the end result of killing a person who is hardly ever on screen..like at all? That person not being on the screen when they are already not on the screen and someone going "yeah we killed her yeah" it has no impact at all if the show did it that way.
Seeing first hand how Jesse struggles and fights to try and stop what he has no hopes of stopping, something he caused by trying to get away, is far more powerful than anything they could have possibly shown with his physical torture.
Also, this shouldn't have to be said but... the only way to kill her and let us know she died without actually showing it would had to have gone 1 of 2 ways.
1) Exact same scene except they cut back to Jesse when they shoot her, so it isnt actually on screen. <-- To do it this way they would have had to have added a gun-shot instead of the silenced shot they used..which would have been pretty fucking stupid for "professional" killers to do and would have completely undermined their characters. Considering how little character development they have had, undermining it at this point would have been extremely careless.
2) have JEsse crying in a cell or something and have todd mention how he killed her in a scene similar to the ice cream one. <-- not powerful at all, would have basically just left us going "..uhm ok.." instead of "wow..that just happened..wow"
