Cowboy Bebop is one of those anime that I think any person could enjoy despite whether they like anime or not. It's just awesome all across the board.. music, storyline, characters.

Trigun was also a good one from what I remembered. Kinda the same time made and style if I recall correctly.

Granted, I barely watch anime, of the 15-20 series I've seen this one is a contender for the best.
