I guess to keep things easy on the budget...below would be my suggested upgrades.

CPU - Intel i7 8th gen
RAM - 3200MHz

And if you have the money, perhaps a 2000 series GPU or 3060/3060 Ti GPU. You're running dual 1080p monitors so you can stick to the 3060s or even 2060s.

what're you trying to run? in general 6/8c+hyper threading would do you well, and a new GPU can always help

right now like bf 2042 for example, want to go up to 1440p at some point too

You should upgrade your GPU first, because 1) your should be 8600K is good enough, 2) you're trying to get to 1440p gaming later on, 3) it's the most costly and rarest part to find and 4) you'd see more benefits from upgrading the GPU than CPU.

makes sense, so gpu then i can do 2 x 8gb ram so i have 32 gb instead of 16 then processor?
Motherboard only if mine fails?

16GB RAM is good enough for the casual gamer. It's only when you're running dual monitors and you got game on one screen, and some shit on the other screen, that you typically need 32GB RAM.

its not necessarily a 2nd monitor
its all about the software and what you are doing on other monitors
i have 5 monitor setup and 3 are for surround only time i seen myself go past 12gb is when I have a shit load of tabs open on a browser and having autocad or editing some pic, so multitasking galore

I can game on surround and have couple tabs on browser going along with hwinfo and few other programs without even spiking to 10gb
but depends on game and software running at the same time

Yeah I’m running 2 x monitors atm with 16 gb
So upgrade to 32 but it seems that it’s unnecessary?
