You don't need more than 16gb of ram, especially in a 800 budget build with monitor. So just get 2x8 ram.
The idea was i3 now, maybe i5 or i7 next gen or after if same socket, another 16gb possible over the next few years, and a better gpu too in time.
I think I might have found 1060 6gb @ $100/each though to maybe go with i5 10600.
I thought Linus / Gamers Nexus had not found dual channel to best single channel in gaming, but a few video searches seem to show otherwise. I think you're right on 2x8 and maybe I'll try to get 4 slots for room later.
Have found 1080p 144Hz monitor around $100-125 too, so that seems best now for budget monitor over a $99 60Hz 1080p or just FB market a $30-50 24" for each. Either way, monitor advice not neccessary, mostly best performance per dollar specs on build itself is what I'm seeking.
