They are both a little bit over budget (like 40 CAD); if you REALLY need to be under 1k, you can either downgrade to 8gb ram, or get a 1tb HDD instead of the SSD, but I would say both of those things will be completely worth the extra little bit of cash spent in the long run.
Cases are completely subjective, you can get a cheaper/different one if you want, won't really affect the performance as long as you have air flow.
The Intel will be a bit better out of the box, but you can overclock AMD (you can't with this Intel chip) so it will achieve about the same performance, and has multi-threading (2 threads per core) so will generally be better in productivity tasks (if you use your computer for anything besides gaming/web browsing, ie photo/video editing, CAD, high end programming, etc)

Don't need any storage or power supply, already got those. I'd rather put the money elsewhere.

Yup

Next big step up would be upgrading to a 1070 (either build), but even with taking the storage and PSU out, it would still put you in the 1100-1150 range.
Here's an updated AMD build: https://ca.pcpartpicker.com/list/fzmfNN
Changes: Added CPU Cooler, higher tier mobo, faster ram, higher tier GFX Card. Would allow for more overclock headroom, and probably the best you're going to be able to get around this price point.
