where to start? im looking to spend at most 800 over the next 3-4 months or should i scrap and start fresh

Keep SSD + gpu and sell the system + monitors.

Once you have all parts, build 2nd system with SSD + gpu you kept
Sell old system for $300-350sh (monitors included)
Use $125isho buy 2x used 1080p monitors
Use rest to buy 1050ti

That's what I would do and have done in the past.
